Got my cooking mojo back and spent the afternoon in the kitchen I made three batches of beans to freeze in the pressure cooker (blk, kidney and great northern), corn tortillas, homemade vegan candy corn (not my best effort), refried beans. Yesterday I made gluten free pumpkin bread for a get to gether.
I've been a bit lucky the past fortnight because my husband has been off work and he was doing all the cooking (and he's much better at it than me). But he's back at work now so I have to put effort in again.
Last night I made lentil stuffed capsicums with beetroot and beans, tonight pasta with caponata and a garden salad.
