What's cooking this week? I had a party yesterday and made a quinoa salad with a tahini dressing, it was delicious. I also made my regular brown rice salad. For the kiddos i made mac n cheeze with a cheeze sauce using cashews and potatos, onion and shallots and lemon juice. It was a winner. I made the snickerdoodles and peppermint fudge. It was hard not to eat any of the cookies, but i did not. Well except for mine

I'm making lasagna again tonight and stressing over Christmas dinner, which is probably way too ambitious and overdue to be simplified.

I hate peeling chestnuts but I love chestnut dressing.

We usually go to friend's on Xmas eve, but DH does not want to go this year, so now that leaves me with meal planning for the three of us. Not a big deal, but want to do something special, as well as for bfast Xmas day.

I do pumpkin bread with dried fruit and pecans and maybe a cranberry bread for Christmas breakfast. You can make it ahead of time and freeze it. It might be a bit much sugar for a three year old, though.
