Drop Biscuits

2 c Flour- white or whole-wheat pastry flour
1 T baking powder
1 t salt (slightly less if you use the whole wheat pastry flour)
1/4 c butter or oil
1 c milk

Heat oven to 400 degrees. Mix dry ingredients well in bowl. Add fat and blend until mixture looks like “meal”. Stir in milk. Mix until ingredients are well blended. Drop from spoon onto greased pan or into greased muffin cups. Bake 10-14 minutes. Makes 12 biscuits.

This is a family favorite and so easy! Pizza casseroll!

1pkg ground soy (or other ground meat alternitive)
1 med onion chopped
2 small cans pizza sauce
4oz grated veggie mozza cheese
1/4 cup chopped veggie pepperoni
1 1/2cup elbow macronni
anyother chopped veggies you like on your pizza
(we like spinach, mushrooms, tomatoes and zuccinni)

Lightly sautee Soy and onions. Add pizza sauce, cheese, mushrooms and peperoni. Cook 1 1/2 cup of macaroni, drain and rinse. Throw it all in a large casserole dish, add remaining ingredients, light sprinkle with cheese and bake at 350 for 25-30 mins.

We usually eat this with a big ceaser salad.

It's not bad, not my favorite, but DH and DD scarf it up. It's a great "kids" meal that's healthy too!

Here is a pretty yummy recipe. I got it when I was a teenager from a lady at church. I made a few slight modifications.

Cottage Cheese Loaf
1 Lb. Cottage Cheese
1 Onion
2 C. Cracker Crumbs or Corn flakes (crushed)
4 eggs
2-3 T Soy Sauce
Ľ C. Butter

Braise onions in butter, add soy sauce and mix. In mixing bowl add cottage cheese, cracker crumbs and eggs, beat until moderately lumpy. Add onion mixture to mixing bowl, mix thoroughly.
Put ingredients into greased square loaf and bake at 350 degrees for 40 minutes or until brown.

Whole Wheat Surprise Muffins

1 egg
1 c milk
1/4 c oil or butter
1 c flour
1 c whole wheat
2 t baking powder
1 t salt.

Follow above directions except at the end. Fill muffin cups half full of batter, drop scant teaspoonful of jelly on center of batter, add more batter to fill c. 2/3 full. Jelly inside, what a surprise. You can also use just white flour for this recipe if you like.

An original recipe, you won't find this anywhere else, it is delicious!

Cheesy Potatoes and Cauliflower

2 1/2 C milk
1/4 C Flour
6-8 Medium Potatoes
Small Cauliflower
2/3 C Frozen Peas
8 Oz Velveeta or American or Cheddar
2 T Sour Cream
1/4 C onion diced
1 T butter
White pepper to taste

Peel, dice and boil potatoes. While the potatoes are cooking prepare cheesy sauce. When potatoes are tender, drain, remove from burner and add frozen peas and cover with a lid.
Cut and Steam Cauliflower separately, then add to potato pan.

Cheesy Sauce:

In 2 quart saucepan sauté onions in butter over medium heat. When onions are transparent add about half of the milk and slowly heat, stirring frequently. While the milk and onions are heating put remaining milk and flour in a separate bowl and mix together until most of the lumps are dissolved and mixed in. At this point add sour cream and milk and flour mixture to the milk and onion in the 2 quart saucepan. Add cheese in 1 inch square chunks or shredded. Turn burner up to medium high and stir constantly until your cheesy sauce boils. When this has boiled, pour on top of your pea and potatoes and mix in. Enjoy!

Our favourite veggie dish...

Tofu Lasagna

* 1/2 (12 ounce) package uncooked lasagna noodles
* 1 (12 ounce) package firm tofu, crumbled
* 2 eggs
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 1/4 teaspoon ground nutmeg
* 2 tablespoons milk
* 1 cup spaghetti sauce
* 1 tablespoon dried parsley
* 2 cups shredded mozzarella cheese, divided
* 1/2 cup grated Parmesan cheese

1. Preheat oven to 350 degrees F (175 degrees C).
2. Bring a large pot of lightly salted water to a boil. Add lasagna and cook for 8 to 10 minutes or until al dente; drain.
3. In a medium bowl combine tofu, eggs, salt, pepper, nutmeg, milk, spaghetti sauce, parsley and 1 cup of mozzarella cheese. Spread a layer in the bottom of a 9x13 inch baking dish.
4. Layer lasagna noodles with the sauce mixture, ending with sauce. Sprinkle with remaining mozzarella and Parmesan cheese.
5. Bake in preheated oven for 25 to 35 minutes.

Makes about 7 servings.

Seven Layer Tortilla Pie

* 2 (15 ounce) cans pinto beans, drained and rinsed
* 1 cup salsa, divided
* 2 cloves garlic, minced
* 2 tablespoons chopped fresh cilantro
* 1 (15 ounce) can black beans, rinsed and drained
* 1/2 cup chopped tomatoes
* 7 (8 inch) flour tortillas
* 2 cups shredded Cheddar cheese
* 1 cup salsa
* 1/2 cup sour cream

1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl, mash pinto beans. Stir in 3/4 cup salsa and garlic.
3. In a separate bowl, mix together 1/4 cup salsa, cilantro, black beans and tomatoes.
4. Place 1 tortilla in a pie plate or tart dish. Spread 3/4 cup pinto bean mixture over tortilla to within 1/2 inch of edge. Top with 1/4 cup cheese, and cover with another tortilla. Spread with 2/3 cup black bean mixture, and top with 1/4 cup cheese. Repeat layering twice. Cover with remaining tortilla, and spread with remaining pinto bean mixture and cheese.
5. Cover with foil, and bake in preheated oven for about 40 minutes. Cut into wedges, and serve with salsa and sour cream.

Makes about 6 servings. It's very yummy!

~QUINOA AND MUSHROOM SKILLET~
  • 2 Tbs. olive oil
  • 1 medium-sized red onion, quartered and thinly sliced
  • 1 cup quinoa
  • 2 cups vegetable stock
  • 10-12 0z. crimini or baby bella mushrooms, sliced
1. Heat oil in large skillet over medium heat. Add onion, and cook, stirring often, until golden, about 5-10 minutes.

2. Stir in Quinoa, and cook, stirring often, 1-2 minutes, or until lightly toasted. Pour in stock.

3. Stir in mushrooms, cover and cook 15 minutes, or until stock is absorbed. Season with salt and pepper; serve hot.
