1 pound boneless, skinless chicken breasts or turkey breast
tenderloins, all visible fat removed
vegetable oil spray
1/4 cup barbecue sauce
1/4 cup all-fruit marmalade or spread, such as orange, apricot, or plum
1/2 teaspoon ground ginger (optional)
Rinse chicken and pat dry with paper towels. Cut chicken into bite-sized pieces. Heat a large skillet over medium-heat. Remove from heat and spray with vegetable spray oil spray. Cook chicken for 3 to 4 minutes in skillet, or until tender and no longer pink in center, stirring occasionally. Stir in remaining ingredients. Cook until heated through, about 2 minutes, stirring constantly.
