My dad's step mam who I mainly grew up with as my Granny is called Kathleen, but I can't decide if I like it better with a C or a K. I like the Caitlin form as well but nobody would ever pronounce that correctly, plus DH won't go for it grr.

I think I prefer Katherine to Catherine - the K seems far fresher and not so middle-aged, despite being the much older version of the name. However, while I've never seen Cathleen before, I think I like Cathleen better than Kathleen for the exact same reasons. It just seems fresher somehow.
One caveat - Katherine is generally shortened to Kate, while Catherine is generally shortened to Cathy. I don't know if there are any short versions of Kathleen/Cathleen, but if they follow the Katherine/Catherine pattern, you may want to think about whether you prefer Kate or Cathy.
