I love to bake. I mostly bake gluten free things. I was sooo looking forward to baking this holiday season because im home on maternity leave expecting a december baby. Anyone have any low carb recipes they would like to share? I found a flourless brownine recipe. Each square only has 6 carbs....just dont look at the calories! ha!



7 oz 85% Lindt Chocolate, broken into pieces
1 C (2 sticks) butter, broken up
1 C Splenda
1 T Vanilla
4 Eggs, beaten
2 C Almond Meal

Melt chocolate and butter over low heat in heavy-bottomed sauce pan
Add Splenda and vanilla to pan (off heat), cool slightly
Add almond meal and eggs, mix thoroughly
Pour into buttered 8" square glass baking pan
Bake @ 325 for 40 minutes
Once thoroughly cooled, refrigerate
Cut into 16 squares and serve.

Here's the nutritional info. for 1 of 16 squares:

cals 282/ fat 25/ carbs 6.6/ (fiber 2.4)/ prot 6.5

Now when you say share do you mean make me some or just telling me how to make it. Cause I don't bake and you do and I really want that..........

Ok. I made the blode version of these last night and they were sooo goood! Awesome recipe for the holidays and super easy!

For 1 of 16 squares: 216 cals/ 19.8 fat/ 4.1 carb/ (1.5 fiber)/ 5.3 protein

They tasted great! a bit of the "splenda" after taste, but all in all it was awesome!

Bless you! My shower is on Saturday and my friend who is baking the cake asked if there was something she could bake for me that I could actually eat... and brownies sound awesome!! (especially with that low of carbs!)

I just made these brownies yesterday and they turned out pretty good! Thanks for the recipe! I love to bake too and I was really bummed and trying to figure out how I was going to manage with the GD. The brownies aren't typically as sweet as I like and a little drier than I would usually make, but they do satisfy that sweet craving!

I like the blonde version better then the chocolate version. It just feels good to have my house smell yummy!

My OB told me I cannot use Splenda to substitute. He told me sugar substitutes are not good while pregnant.

Just curious if any of you heard that?

I don't use sugar substitutes. Most OB's recommend against it, though some will say that small amounts are ok. Personally, sugar substitutes make me nauseous, except for tiny amounts. I can stomach a granola bar with a bit of sucralose in it, but anything more than that makes me sick.
