Salmon patties

salmon patties...(for 4 patties, you can double the salmon for 8 patties (still only 1 egg though). i usually give 2 per person)

1 can boneless skinless salmon (tuna sized can or pouch, i prefer chicken of the sea)
chopped bell pepper and onion
seasonings to taste (garlic salt, etc)
1 egg
1tbsp mayo (sour cream works ok too)
and about 3 tbsp rolled oats (as i figured this would be better than breadcrumbs)

combine all.
...i let that sit for about 15 minutes then form patties and bake them at 350 degrees for about 20 minutes or until firm.

If they are too wet to stick together, add oats. If they are too dry try adding some water.

you can also pan fry them, but i get worried they arent cooked in the middle when i do that and they fall apart more easily.

Yesterday I topped them with sour cream mixed with chopped pickles and mustard (sorta kinda tartar sauce, but not sweet obviously.)
