Easy meal!

Pasta dishes are usually cheap.. We love pasta here. I also make an organic barley and veggies soup that doesn't cost that much, and is yummy!

Vegetarian chili using dried beans and my home canned tomatoes
AND
Rice with stir-fry veggies (with a simple GF soy sauce or lemon pepper seasoning)
AND
Tacos using venison (hunted and butchered ourselves)
AND
Of course, Left-Over Veggie Soup (all leftover veggies put in a butter tub in the freezer after every meal - once full, add a jar of home canned tomatoes - or chopped fresh from garden - and crockpot it all day) with from scratch cornbread

Venison tacos are my favorite! They're so tasty.

Venison anything is a great money saver, too. DH is an avid carnivore and feels kind of cheated when I make him eat meatless meals. Meat is just so expensive.

But venison is completely different. He gets to spend a day out of the house shooting things and his father has a grinder, so we process all the meat ourselves. Between that and backyard chickens, I haven't bought meat since August.

Lentils, a can of diced tomatoes, olive oil, ginger, garlic, and curry powder. You can also add chicken, but it's good without too.

That sounds delicious! I have some lentils, and was debating what to do with them! Any other lentil recipes you have?

Other than that, not much. Sometimes I will use them in a stew with sliced sausage, carrots and potatoes and a chicken broth base.

I like making breakfast for dinner - pancakes, bacon and fried egg sandwiches. It's a cheap meal if you can get the bacon on sale.
Otherwise, we sometimes do fancy grilled cheese with lunch meat, chili dogs, or a chicken quesadilla soup with more beans than chicken. Oh and lots of pasta dishes.
