They were vegetarian, but never ever had I made vegetarian meatballs that actually LOOK and taste like meat! It was awesome.

Yes! Sort of, anyway. I played with the recipe a bit (switched bread for crackers; I haven't had any yeast in a while, so I'm out of bread, and I used a mixed nuts meal and less cheese).

Here's what you do:

blend some pecans (I used the pecan lovers mix I got for free at CVS about 3/4 of the can, or about 4 oz.) making a pecan meal.
Add a whole sleeve of crackers and blend again. Put the mix into a bowl.

Add seasonings (garlic, onion powder, italian seasonings, what ever you like).
stir in 4 eggs
Add about 8 oz. cottage cheese
add some shredded cheese (the recipe actually called for 2 cups; I only used one).

Roll into balls (if it's still too sticky, just add a few more bread or cracker crumbs). Bake at 350 for 20 minutes. Then you can either add them to your spaghetti sauce or you can put a bit of sauce in the bottom of a baking dish, lay the balls in, and cover with more sauce and bake for 20 or 30 minutes. They were so good, my DH didn't know they were vegetarian until I actually TOLD him! And he's really super picky.

Now, how to make them without cottage cheese is the question ... lol. I hate cottage cheese.

So does my picky little Kaitlinn, but she loved the meatballs. You don't taste the cottage cheese, silly...

Yes, but I may not be able to rid myself of the visual of putting it in the bowl. Ick! Hate hate hate cottage cheese. The camp I used to work at used it in their lasagne instead of ricotta ... *gag*, and then one summer half the staff got RotoVirus from some kid setting tables who didn't wash their hands ... on lasagne night. The memories of that are simply too powerful for cottage cheese eating. No. No no no no no. I will find an alternative. What, I don't know, but dang it, I want meat balls. lol.

Do you have an aversion to ricotta? Maybe you just found your substitute.

Mmmmm, I could do the ricotta. Good call. I think I have a can of nuts around here, perhaps we will have non-meaty-balls for dinner. Hmmmmm.
