Any of the "Helpers" can be home made if you know how to make a basic white sauce or a basic gravy... I do this quite often for beef, chicken, and tuna. Burritos is our favorite use of ground beef, and also chili.

hamburger stew (it's burger, cubed potatoes, jiffy biscuits dropped on top, baked)
goulash (elbow noodles, diced tomatoes, ground beef)
fake steak (formed burger, thinner than hamburgers, then grill and dress with a gravy)
lasagne
pizza (we use ground beef on pizza all the time)
about a million casseroles ... in fact there's a Burger Pillsbury magazine out right now ... run down to the grocery store magazine rack and steal some ideas. Don't buy the mag, though, it's like $6.

I'm all over stuff that I can freeze and use later. That way, when I don't feel like cooking, I just pull out a meal from the freezer.

Make meatballs, lasagna - really any kind of pasta with some ground beef in the sauce is great.

We're having tacos tonight. You can make a ton of Mexican food - tacos, burritos, fajitas (not typically made with ground beef, but you can do it.)

I love bettycrocker.com You can type in what you have - like ground beef and tomatoes- and it will give you a ton of recipes with those ingredients.

Chilli
Meatballs
and my husband's favorite goulash which is really easy to make

I just brown the ground beef with onions, garlic and green peppers and once the veggies are tender I toss in a can diced tomatosand let simmer for a while and I add cooked elbow macaroni and season with a bit of black pepper, and then we have left overs for hubby's lunch!
