I try to be frugal. I try to cook from scratch. Sometimes it works. Sometimes it goes horribly wrong ... like tonight.

Peppers stuffed with sausage and rice ... except the stupid rice didn't cook. This is the second time this same rice hasn't cooked when I thought it should have. No more buying Meijer brand rice for Mandi. Frugality loses that battle.

Then, I made homemade brownies because Adam wanted brownies (and doesn't eat cooked fruit ... more on that in a sec). After 30 minutes, they were still super wet in the middle. Another 20 minutes and they were *barely* firm. I finally pulled them out and let them cool. They taste like crap. Spongy, cakey, airy, and not at all tasting like a brownie. Grrrr.

And, since we have a bunch of apples straight out of the orchard, I decided to make an apple cobbler. The apples themselves turned out amazing. The biscuit-y topping that I made from scratch ... foamy, squishy, kind of like sludge, and basically disgusting.

Grrrrrrr! Sometimes frugal cooking sucks.

My main from scratch disaster....whipped icing (the kind you get at Wal-mart on the decorator cakes. Other things too but that is the most recent one.

Did you cook each of those things in the oven? Maybe there's something wrong with it...

I haven't had problems with the oven in the past. I'm going to guess that it's because all three were new recipes. Grrr.

I don't know about the rice not cooking, I usually only use minute rice or put it in a rice cooker. But for the other items, what type of flour are you using self-rising or all-purpose. If it is all-purpose are you putting the baking powder and salt? That may have something to do with it. I even heard that if it is old flour that may cause problems too.
