I am allergic to mold so I take great care to not eat anything expired. I'm sort of a snob about expiration dates and won't eat food NEAR expiration. Totally going to check the expiration on my pancake mix. Cookies and cake don't last long enough to be concerned.

Thanks so much for this link! We're all EXTREMELY allergic to mold (had it in our old house). We usually buy the sealed up packages of mix, but now I know to never buy a box of mix EVER for our household.

You can probably keep it in the fridge. Or get those shake up bottles where you just add water and store those in the fridge until you're ready to use them.
