1/2C julienned sweet red pepper
1/2 C chopped onion
2 T olive or vegetable oil
3 eggs
1/2 C milk
1 C chopped chicken, optional
1 (10oz) frozen chopped spinach, squeezed dry
1/2 C shredded mozzarella cheese
1 T grated parmesan cheese
1/2 t salt
1/4 t pepper

In a skillet, saute the red pepper and onion in oil until tender. In a bowl, beat milk & eggs. Stir in chicken if desired, 1/2 C spinach, mozzarella and parmesan cheese, salt & pepper (save remaining spinach for another use). Add to skillet. Cover and cook over medium heat for 7-10 mins or until completely set. Cut into wedges.
