Alex is going through about 7-8 containers of formula a month... what do you do with all of the empty containers? Does anyone have ideas or do you just toss/recycle them?

I toss/recycle them. I have no use for them!

I save the most recent one in case I get another sample container of formula. That way I can use the container with the better seal on it (assuming you use Similac). The rest of them get recycled.
