Pulled Pork

1 boneless pork shoulder roast (2 1/2 to 3 lbs)
1 cup chopped onion
1 bottle (12 oz) of your favorite bbq sauce (I use Dinosaur bbq sauce--and I actually use 2 bottles)
3-4 Tb honey
Dash hot pepper

1. Trim excess fat from pork. Put pork in slightly greased slow cooker.
2. Combine onion, bbq sauce, honey and hot pepper...pour over roast
3. Cook over low 7-9 hours.

Serve the pulled pork on a kaiser roll...and the New York way of eating pulled pork is to make coleslaw and put it on top of the pulled pork and eat it all as a sandwich..........sooooooo good becaue the pork and coleslaw combines...YUM!!!

My favorite slow cooker recipe is Black Bean Chicken Burritos. It's so easy!
2-4 chicken breasts
1 can black beans (drained)
1 can corn (drained)
1 can chicken stock
8 oz jar of salsa
1 packet of Taco seasoning
2 cups cheese
1 cup sour cream

Add everything to your pot except the cheese and sour cream. Slow cook on Low for 6-8 hours, or High for 3-4 hours. Half an hour before time is up, add the cheese and sour cream, and with two forks shred the chicken in the pot. Serve with tortillas, with more cheese, sour cream and salsa on the side.

yum that sounds good and it's an easy recipe to doctor up and make low-cal

This looks so yummy! Definitely going to have to try it!

Chili-chicken tacos

2 pound(s) (about 6) boneless, skinless chicken thighs (I also use breasts or whatever I have on hand)
4 clove(s) garlic, thinly sliced
1/2 cup(s) prepared tomato salsa, plus more for serving (optional)
1 to 2 tablespoons chopped canned chipotle chiles in adobo (you could also use canned jalapenos if you can't find the chiles in adobo)
1 tablespoon(s) chili powder
salt and ground pepper
taco shells
Cilantro, shredded cheese, lime wedges, and sour cream, for serving (optional)

Directions

1.In slow cooker, combine chicken, garlic, salsa, chiles, chili powder, 1 teaspoon salt, and teaspoon pepper. Cover; cook on high, 4 hours (or on low, 8 hours).
2.Transfer chicken to a serving bowl, and shred, using two forks; moisten with cooking juices. Serve in taco shells, with toppings, if desired.

My favorite way to eat these is hard shell, with cilantro garnish and lime juice squeezed on top. YUM YUM I'm such a sucker for Mexican food!

Sweet Pork Burritos

1-2 pounds of pork (I usually use a pork sirloin)
1 can of coke
1 cup of salsa
1 cup of brown sugar
1 tsp ground cumin

Directions:

1. In slow cooker combine all ingredients and cook on high 4 hrs or low 8 hrs
2. With 2 forks shred pork and stir in cooking juices

I usually serve these with warm flour tortillas, cilantro-lime rice, black beans, and mozzarella cheese. Its way easy and tastes great!
