I don't really plan, but I found a really nice way to have quick, healthy, tasty dinners for a reasonable cost. Albertsons here has various pre-made meals including chicken cordon bleu, chicken and beef kabobs, and stuffed pork chops. When they get close to their expiration date, they mark them down half off. I discovered that Wednesday is a good day to get them half off, so Juliana and I swing by after Gymboree class to pick out our dinner for Wednesday and there's usually something for Thursday. I love our system.

We have tons of meat right now...so I need to look thru my recipe book to pick what actual meals we are having.

But tonight we are doing apple-sage pork chops. Dunno what with. But that is the main meal. And we have a steak for the grill tomorrow, if it is not raining. Today it is dreary out.

Otherwise, I just grab something the day of

monday we had slow cooker blacked eyed peas with couscous, last night we had potato gnocchi with a lemon herb sauce...not sure what's on the menu for tonight, but it will probably involve asparagus...maybe some orzo.
i try to plan at least 3-4 meals out of the week and wing the rest of it. my husband cooks half of the week.

tonight we will have left over corn-poblano chowder with black bean cakes. tomorrow is chili night, and I'm also making a tempeh stir fry at some point this week and maybe swedish meatballs too. yum.

For lunch we had curry couscous and bombay potatoes and chickpeas and Evelyn had some chicken and a frozen waffle since what we ate was a little too spicy for her tummy. We usually have small dinners, like maybe some hummus and veggies.

Since I live 30 miles from a grocery store, I meal plan each week and make sure I have what I need. We are seeding right now as well so I have to take supper out to the field some nights and feed 4 men a hearty meal plus dessert, so it takes some planning!

This week on the menu:

Breakfast for dinner (eggs, toast, bacon, fruit)
Shake and bake chicken, potato salad, beans
Chinese Noodle Casserole
Chicken/Veggie/Pesto Pasta
Roast beef supper
Spagetti and Meatballs

Tonight we had pizza. Tomorrow we are having corn cake, green beans, mac and cheese....maybe hot dogs, chicken, hamburgers, or veggie burgers....not sure which one yet.

I have never been one to plan weekly meals, or even whats for dinner the next day because when I wake up I want something completely different.
