chicken and black bean enchiladas
8 to 10 large tortilla shells
1 8oz block cheese ( I love seriously sharp from Cabot)
4 chicken breasts
1 can of black beans
2 small cans of enchilada sauce
2 cups of shredded cheese
1 diced onion
Spices of your choice. I used Salt, pepper, chili/lime powder, garlic powder, onion powder about a tbsp of each. It really depends on how much you like and how spicy you like it.
Boil the chicken breasts in 3 to 4 cups of water and spices until cooked. DO NOT DRAIN THE WATER. Shred the chicken. In a large bowl add the black beans and the diced onion. Pour some of the flavored water back in and stir until it is a consistancy that you like. I don't like mine really "juicy", but some people do.
In a large baking dish wrap 2 slices of the cheese and the chicken mixture into a tortilla shell. Once the pan is full top with Enchilada sauce and shredded cheese. Bake until cheese is melted and bubbly. Serve with salsa, guacamole, sour cream, what ever you like.:D
