Crock pot recipes.
 
I need easy crock pot recipes! Something where I can just throw in a few ingredients and turn it on. I don't want to have to brown any meat first. Also, nothing with a ton of different spices and herbs. Basic ingredients where I won't have to do a ton of shopping first. Any ideas?

Beef-n-Noodles

Chuck Roast or Stew Meat (2-3 pounds)
1 envelope onion soup mix
1 can cream of mushroom soup (I usually use two for more creaminess)
Potatoes, quartered
Carrots, cut into 3rds
Mushrooms
Celery cut into chunks


Cook on low for several hours; serve over rice and noodles. It is DELICIOUS!

Slow Cooker Stew (from Taste of Home)

1 pounds beef stew meat
2 medium potatoes, peeled and cubed
1 can (14oz) beef broth
1 can (11.5 oz) V8 juice
2 celery ribs, chopped
2 carrots, chopped
1 medium onion, chopped
3 bay leaves
1/2 t. thyme
1/2 t. chili powder
salt and pepper

Cook on low 7-8 hours. Add 1/2 c. frozen peas and 1/2 c. frozen corn. Cook on high for 30 minutes and serve!

(I always made a double batch of this...works great!)

Slow Cooker French Dip

4 lb rump roast
1 can (10.5 oz) beef broth
1 can french onion soup
1 can beer

Cook on low for 7-8 hours. Shred meat and put on bun; use remaining juice for dipping.

CrockPot Chicken Teriyaki

2-3 pounds skinless chicken pieces
20 oz can of pineapple chunks (pineapple rings work great, too)
dash of ginger
1 c. teriyaki sauce

Cook on low 6-8 hours. Great over brown rice.

All these recipes were from our pre-Paleo days...almost makes me miss pasta. Almost :D

Melissa I didn't know you were doing paleo!! Can you share some paleo meal plans sometime? My husband is doing paleo.

Sure, Kristen! I actually just downloaded a Paleo Crock-Pot cookbook on my Kindle :) I also borrowed this one for free, but I love it so much that I'm going to buy it: Well Fed: Paleo Recipes for People Who Love to Eat: Melissa Joulwan, David Humphreys, Kathleen Shannon: 9780615572260: Amazon.com: Books. The Well-Fed book has a chapter in the beginning about dedicating an hour during the weekend for food prep (cooking meat, chopping and/or steaming vegetables) so that fixing meals and snacks during the week is a lot easier. I'm going to try that either this weekend or next, because what I'm doing now just takes too long

We're doing mostly Paleo...we do still eat some dairy. I don't stress over every single tiny thing following the rules, but the recipes are a great jumping-off point for eating clean. It is a lot of work, especially when you are getting used to it, but we both feel so much better that it is worth it.
