3 pkgs (1lb each) peeled miniature carrots
1/4 cup fat free margarine
1/3 cup maple syrup
1/4 tsp salt
1/4 tsp pepper
1/4 cup peacans, chopped
2 tbs. finely chopped parsely
Bring in large saucepot of lightly salted water to a boil. Add carrots and cook for 6 to 10 minutes until tender. Drain well, set aside.
Melt butter in saucepot or large, deep non stick skillet over medium heat. Stir in syrup, salt and pepper. Add carrots. Cook over medium-high heat 10 to 15 minutes, turning carrots often until lightly browned. Add pecans and cook 2 minutes. Just before serving sprinkle with parsley.
