2 tablespoons oil
4 cups thinly sliced onion (about 1 1/2 pounds)
3 tablespoons soy sauce
6 cups water
1 1/2 teaspoons salt
4 slices whole grain bread, lightly toasted
1 cup shredded Swiss cheese
Heat oil in a soup pot; add onion and soy sauce; cover and stew over low heat until soft and pulpy, about 20 minutes. Add water and salt, bring to a boil and simmer, uncovered, for 10 minutes.
Place 1 slice of toast in each serving bowl and pour on boiling soup. Sprinkle with cheese.
