1 1/4 cup of oatmeal (quaker oats- put in the food processor to grind them up)
1 cup of low fat cottage cheese
1 cup egg whites
1 tsp vanilla extract
Mix all ingredients in a large bowl until smooth, if you want to add fruit, do so now. Turn stove to medium heat and pour about 1/4 cup of batter into the pan. When pancake begins to get small bubbles flip it. Serve with syrup, fruit- whatever you want.
I know these sound weird, but they are SO good.
They are 4 points for 1/3 of the batter. I have not made them myself yet, I tried them in nutrition class- but when I do I will let you know how many panckaes you get.
I've seen lots of sweet recipes with cottage cheese lately. It's something I never thought of, but I've heard great things. I'll have to try some. Thanks for sharing!
I tried this today. It wasnt bad. I just used 3/4 cup of cottage cheese and 2 whole eggs because I didnt want to waste the yolks in that much eggs. LOL It may be better if you follow the recipe exactly.
It also may taste better with fruit, it wasnt bad though. Filling too.
Oh and I had one pancake. They made 4 lg ones. I made them all up and then put the others in the fridge. Hopefully there taste good tomorrow.
