Try to lighten the whites of the eyes with the rest of the face...the issue is that the skin around the eyes is too underexposed and whitening the whites makes it look unnatural. Your best bet would...

Ive done that too. It sucks. Now I just leave it on RAW. You can always do RAW + JPEG. It takes up more room on your memory card but you can save yourself those mistakes.

I would recommend Photoshop Elements. If you are looking for free stuff I dont really have any suggestions. GIMP is free and very similar to photoshop but it will take some learning.

I did much better with physical books than I did with the internet. The "for Dummies" series really helped and they usually have one specifically for your camera.
