This is the recipe I grew up on - my dad got it from some fancy restaurant he and my mom used to go to when they first got married... If you're afraid of raw eggs, use pasteurized eggs.
3 romaine hearts, washed, dried and chopped
1-2 tsp fresh ground black pepper
3-4 T fresh grated Parmesan cheese
Chopped tomatoes (optional)
1 egg yolk
1/4-1/3 tsp anchovy paste
1 small clove garlic, smeared around the inside of the bowl and then diced
2T extra virgin olive oil
2T vegetable oil (I use canola)
1T red wine vinegar
Whisk the dressing together in a large bowl. Add a third of the lettuce, then a third of the pepper and cheese. Mix in with dressing. Repeat with remaining lettuce, pepper, and cheese. Add tomatoes if you desire (not a traditional ingredient, but I like it).
You can turn this into a main dish by adding grilled, roasted or sauteed chicken breast or shrimp.
