Turkey Salad Platter
1 lb. chopped cooked smoked turkey breast
2 stalks celery, sliced 1/2 inch thick
1/2 cup mayonnaise or salad dressing
1/4 tsp. cracked black pepper
8 cups mixed baby salad greens
1 medium orange, cut into wedges
1/2 of a small red onion, thinly sliced and separated into rings (1/4 cup)
1/2 cup bottled raspberry vinaigrette
1/2 cup dried cranberries
1/2 cup broken walnuts, toasted
In a medium mixing bowl, combine turkey, celery, mayonnaise and pepper. Cover and chill until serving time, if desired.
To assemble, spoon turkey mixture onto a large serving platter. Place salad greens and orange wedges around the turkey mixture. Top greens with red onion rings. Drizzle raspberry vinaigrette over greens. Top tirkey mixture and greens with cranberries and toasted walnuts. Makes 6 servings.
