Monterey Chicken


Boneless Skinless Chicken Breasts (however many you need to feed your family)

Cooked Bacon (2 slices per breast)

Honey Mustard Dressing (Or you can use BBQ sauce if you prefer)

Jarred Sliced Mushrooms

Colby Jack Cheese



Onion Powder

Garlic Powder

Green Onions


-Preheat oven to 350

-Roll out or pound chicken breasts to 1/2" thickness

-Place in baking dish sprayed with cooking spray

-Season the top of each breast with salt, pepper, onion powder and garlic powder

-Cover each chicken breast with honey mustard dressing, however much you like (DH likes only a little, I like a lot)

-Place two strips of bacon on top of each breast

-Put mushrooms on top of each breast (or skip them if you don't like mushrooms)

-Cover each breast in cheese

-Bake at 350 until chicken is cooked through (usually 30-45 minutes)

-Top with thinly slices green onions and serve

Loaded Mashed Potatoes

(This is way easy because I cheat.. )


Betty Crocker Garlic and Herb Mashed Potatoes

Cooked Bacon (crumbled)

Shredded Cheese

Sour Cream

Thinly Sliced Green Onions


Prepare mashed potatoes according to instructions on the box

Top with remaining ingredients

Yellow Squash


Yellow Squash (about 1 per person) cut into 1/4" slices

Butter (2-4 tablespoons)

Finely Chopped Onion (use one or half of a small onion depending on how much squash you cook and how much onion you want)

Salt and Pepper


Saute onion and butter until onion becomes transparent

Add squash and cook until it reaches desired tenderness

Salt and Pepper to taste
