3/4 C peanut butter (creamy or chunky)
1/2 C shortening
1 1/4 C brown sugar, packed lightly
3 T milk
1 T vanilla extract
1 egg
1 3/4 C flour
3/4 C salt
3/4 t baking powder

Heat oven to 375*. Combine peanut butter, shortening, brown sugar, milk, and vanilla in large bowl. Beat at medium speed until well blended. Combine flour, salt & baking powder in a separate bowl. Add to creamed mixture at a low speed.
Drop by tspfuls 2 inches apart. on ungreased cookie sheet. Flatten in crisscross w/ fork dipped in sugar. Bake 7-8 mins or until just set & beginning to brown. Cool 2 minutes on pan.

Yields 3 dozen cookies
