Baked Potato Soup

4 large potatoes (baked)
3/4 tsp salt
1 1/2 C shredded Chedar cheese
2/3 C butter
1/2 tsp pepper
1 C sour Cream
2/3 C flour
4 scallions (chopped)
6 C milk
12 slices crisp bacon (crumbled)

After potatoes are baked, cut in half and scoop potato out. Place in bowl and set aside. In large sauce pan, melt butter. SLOWLY add flour, creating a smooth paste. Add mild slowly, stirring constantly. When thnk, add potato, salt, pepper, 2 TBSP scallions, 1/2 C bacon and 1 C cheese. Remove from heat and add sour cream. Stir until combined..

Top with remaining scallions, cheese and bacon.

Makes a lot and is really yummy, especially on a chilly day!
