I have a few friends in Ireland and when I was getting out on my own, one of them (Terri) gave me this recipe. It makes A LOT. We usually make it on a rainy sunday and it will last until Wed/Thurs. It's great when you're on a budget or don't know what to make for the week. I give this recipe to everyone and it's GREAT if you're sick too! This is exactly as it was emailed to me, I have never tried the mashed spuds option.

Terri's Irish Chicken Stew for Steph:

What you need:
1 Large pot. (Woo!)

Chicken Breast/Fillets for 4 people.
4 Onions
6 Carrots
8 Fist-sized potatoes or equivalent
1 Head of broccolli
1 Garlic Clove
1 Turnip (not neccessary!)
2 Vegetable Stock Cubes
1 Chicken Stock cube
1 Packet of veg soup.


Fill the large pot 1/2 of the way with boiling water.
Slice your chicken into BIG chunks
Peel outer layer of onions, then dice onions (all of them) and throw into pot.
Slice carrots down full length so you have two long halves, then chop the two halves into bits.
Cut stalk off of broccoli and chop head up, throw into pot with carrots and onions. (dont use stalk!)
Peel large potatoes and slice each into 4 pieces, place in pot.
Take a garlic clove or 2 and CRUSH, sprinkle into pot.
Peel off outside of turnip. Chop 1/3 of inside into cubes and place in pot.

You now should have a half a pot of vegetables and chicken!!!

Next, sprinkle tablespoonful of salt over mix. And add some pepper too.
Take stock cubes, and mix with 2 pints of boiling water until dissolved.
Pour into pot. Add some parsley/Thyme if you'd like.

You should now have a 4/5 full put of water and veg n chicken.
The veg should come upo about half way. The rest is water.
Add packet of soup and stir for 30 secs

Stick pot on high heat for 90mins.
You're gonna need to check it every 10 or 15 mins to kind of stir it a bit. The veg will all break down and mix and turn into a stew, same with the chicken.

Yum yum.

If a layer of skin builds on top scrape it off every 10 or 15 mins. Its probably just the fat boiling off the chicken.

If you want, you should do some mashed spuds as well, and pour the stew over the mash when serving, its delicious.
