I've been doing a lot of these simple meals for Kira and I thought I'd share. I got the idea from a website and it's so easy! I usually give her a pureed veggie in addition and call things good.

One meat:
* 1 can of chicken breast OR
* 1 can of salmon

One starch:
* 1 can of black beans OR
* About 1/2 cup cooked rice

One veggie:
* Diced red bell pepper (sautéed) OR
* About 1/2 cup defrosted frozen peas

Take one of each of the above, mix them together in a small mixing bowl, and sprinkle in some shredded cheese if you want.

I put little silicone baking cups in a muffin tin and spoon a bit of the mixture into each cup, then stick the muffin tin in the freezer. When they're frozen, pop each little cup out of the silicone mold and put it in a ziplock bag. If we're out most of the day, I just let one thaw in her lunch bag; otherwise they reheat really fast in the microwave.

Kira's favorite combinations are: chicken/beans/cheese and salmon/rice/peas/cheese. She's on a red bell pepper strike so I may try corn in the next round instead. Any defrosted frozen veggie will work!

Those sound really good. I may try them for Jacob. I never thought of the salmon.
