This is a recipe I made up. I'm not good about measuring stuff and I always have to make a huge pot to feed my minions, so adjust to suit your needs.

Start by sauteing chopped onion in a moderate amount of neutral oil (I use sunflower oil), until onion is soft. Add rinsed quinoa and toast a few minutes. Then add lentils and 2 cups water for each 1 cup combined quinoa and lentils. In other words, if you are using 1 cup quinoa and 1 cup lentils, you will add 4 cups of water. You can substitute chicken broth for water if desired. Add in dash of cumin, a stick of cinnamon, 1-2 bay leaves, salt and black pepper to taste. Curry powder can be added at this time if everybody in your family likes it. Simmer about 25 minutes or until done, adding more water if necessary.

Can serve with dallop of plain yogurt or sour cream.
