1 tablespoon butter or neutral oil
1 medium onion, chopped
1 tablespoon peeled, chopped ginger
4 cups vegetable broth or water
1 teaspoon salt (omit of broth is salted)
1 tablespoon soy sauce
2 cups pumpkin puree (1-pound can)
1/2 cup milk
1/4 cup nonfat dry milk powder

Heat oil or butter in a 3-quart pot and saute onion and ginger for 3 to 5 minutes to soften. Add liquid, salt, and soy sauce and bring to a boil. Stir pumpkin into boiling soup and cook until smooth and heated through. Before serving, combine milk and milk powder to dissove, stir into soup, and warm without boiling. Makes 1 1/2 quarts; serves 6. [Note: I have used a small amount of half and half rather than milk and milk powder with excellent results. From American Wholefoods Cuisine.]
