PhD had a really good quinoa recipe I printed a while ago to try out!!
It was a stir fry.

I posted this in the other thread.. but this is my favorite way to make quinoa.. in chicken or veggie stalk with cilantro and lime juice/zest at the end.. Top with chicken how you like...

my inspiration was from here but I would do it without the avocado topping. Didn't taste so well. Blackened Chicken and Cilantro Lime Quinoa

Not sure if this is a favorite yet, but it's one I found and I'm trying this weekend and can review it for you later.

Hummus Quinoa Cakes

1 cup cooked quinoa
1/2 cup hummus
1/2 cup red pepper; minced
2 celery stalks; minced
2 green onions; chopped
1/2 tbs olive oil
tomato slices and extra hummus (optional garnish)

Combine hummus with quinoa, red pepper, celery, and onions. Season with salt and pepper.

Heat pan over medium heat and add olive oil once heated.

Form quinoa mixtures into patties and brown in pan; work in batches do not overcrowd pan. brown for 3-4 minutes each side.

Serve with hummus and tomato slices.

They looked yummy and easy!!

I made chicken, kale & quinoa last night.

- cook 2 chicken breasts
- cook quinoa (I did 1 cup of quinoa)
- saute kale & loads of garlic in olive oil until tender
- toss in quinoa & diced chicken.

Soooooo yummy.
