DH is supposed to cook tonight...Chicken enchiladas! I can't wait!!

I bought a roasted chicken at Costco and he just debones it and uses the meat for the filling. EASY and super good!

DD1 has ballet from 5-6 and DH has to work so it will be some sort of take out for me and the girls...right now leaning toward KFC's Monday Night Specials lol

Stir fry with ramen noodles. Cheap and easy. And the kids love it.

Crock pot lasagna with a twist, instead of noodles I thin strips of zuccini.

We tried the new sauté express starters from Land O'Lakes. They're these little packets of butter and oil with herbs. I used the garlic and herb one. You just melt it in a pam, add chicken or whatever meat you want and let it cook.
It was yummy!

2 days late here...

We had red curry chicken with rice and veggies last night.
I had to make BBQ chicken on the side for the boys who didn't want the chicken simmered in curry.

Tonight I'm thinking either rice tacos or a chicken/rice casserole.

Last night we ate spaghetti with turkey meatballs and ciabatta bread...

It was yummy!
