Tomato Mac and Cheese

Melt 3 tb butter on medium heat. Add half of an onion (chopped small) and cook until translucent. Add 1/4 c flour. Cook about 4 mins, until it is blonde looking. Whisk in 2c hot milk. Whisk well so it doesn't clump. Bring to a boil and then reduce heat. Let it simmer about 8-10 mins to thicken. Add 4 oz mild cheddar, 4 oz sharp cheddar, and a few splashes of your favorite hot sauce. When cheese is melted, add 1 can diced tomatoes (drained). Stir together. Add a pound of your favorite small pasta (already cooked). Let it cool and freeze it. (If you want meat in it, add desired amount of ground beef, chicken, or turkey.)

When you go to cook it, thaw it and top with bread crumbs. Bake on 350 until warm throughout and brown and crispy on top. Yum.

I think I might try this one!

Cilantro Lime Chicken w/ Corn and Black Beans


1 1/2 pounds chicken breasts
Juice from 2 limes
1 bunch fresh cilantro, chopped
1 (16 oz) bag frozen corn
2 minced garlic cloves
1/2 red onion, chopped
1 can black beans, drained and rinsed
1 tsp cumin
salt and pepper to taste


Place all ingredients in a resealable gallon-sized freezer bag. Mix together and zip bag closed.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW in crockpot for 8 hours (or HIGH for 4 hours).
Serve with tortillas and toppings such as with sour cream, guacamole, salsa, and cheese.

Lemon & Oregano Roast Chicken
recipe adapted from Food & Wine

1 chicken (3 to 3 1/2 pounds), quartered
1 tablespoon olive oil
1 1/2 teaspoons dried oregano
2 cloves garlic, minced
1/2 teaspoon poultry seasoning
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon fresh-ground black pepper
1 1/2 ounces feta cheese, crumbled (about 1/3 cup)
2 tablespoons fresh italian flat leaf parsley, minced - for garnish

* To make ahead/freezer meal - Coat the chicken with the oil; sprinkle the chicken with the oregano, garlic poultry seasoning lemon juice, salt, and pepper. Place the pieces in a large gallon sized freezer bag. Squeeze out any excess air, seal and freeze. When ready to prepare, defrost. Preheat the oven to 375º. Place chicken on baking sheet and bake in preheated oven. Cook the chicken until the breasts are just done, about 30-40 minutes. Serve roast chicken and garnish with crumbled fresh feta cheese and minced parsley.
