Tonight's dinner:

"White vegetable soup"

I don't know what else to call it, I 'came up' with it years ago when I was making potato and leek and had a brain freeze and put some mushrooms in by mistake, and it came out pretty good, so I played around with it a bit and ended up with this.

Serves 2

1/2 onion, diced
1 cup chopped leek
2 large potatoes, diced
1 clove garlic, diced or minced
1 parsnip, diced
1 cup diced mushrooms
1 large celery stalk, diced
1/2 cup zuchinni, peeled and diced
1/2 cup cannellini beans
4 cups vegetable stock
Olive oil
Ground pepper

Chives and parmesan cheese to serve.

Lightly fry onions, leeks and garlic in oil, add stock and add other ingredients, bring to the boil then simmer for 30-45mins.

Puree in a blender and add chives and parmesan cheese to serve.

I haven't done a lot of real cooking lately, but this was dinner a couple nights ago:

They turned out pretty good, DH ate 4 of them! But next time I'll use less cheese. Oh and I didn't do the spices listed, I seasoned my chicken with a garlic herb mixture when I cooked it, then when I mixed up the pot pie I just added some onion powder, salt and pepper.

We eat a lot of salads. My favorite is Strawberry feta with caramelized pecans Super easy to throw together!

I box spring salad lettuce mix
6 to 8 strawberries slices,
1/4 Feta
1/3 cup pecans (first roast them in a pan over medium heat then ad maple syrup to caramelize)
Toss with creamy American balsamic ( I use Brianna's Homestyle New American balsamic)

You can serve with grilled chicken to round out the meal... YUMMY!

Here is a new recipe I tried last night & is a KEEPER!! Even my daughter who isn't a meat eater liked it!! Rare I cook a meal she will eat :-) It sound weird but it was really good and we served it with brown rice & green beans.

Simply Great Chicken

1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up and skin removed (I just used 4 chicken breasts)
1 envelope Italian salad dressing mix (the dry mix--- not bottled dressing)
1/2 cup packed brown sugar

In a greased 13-in. x 9-in. baking dish, place chicken in a single layer. Sprinkle with salad dressing mix and brown sugar. Bake, uncovered, at 350° for 55-60 minutes or until chicken juices run clear. Yield: 4 servings.

Peanut butter is my favorite cooking ingredient. It’s just about my favorite everything. There’s nothing peanut butter I won’t eat. Here’s a recipe for some kick *** peanut butter cookies

1/2 cup sugar, 1/2 cup packed brown sugar, 1/2 cup butter, 1/2 – 1 cup peanut butter, 1 egg, 1 1/4 cup flour, 3/4 teaspoon baking soda, 1/2 teaspoon baking powder. Preheat oven to 325 (350 for more crunchy cookies) and bake 7-12.
