1 lb ground bison
1 stalk celery, chopped fine
2 small sweet red peppers, chopped fine
1 clove garlic, finally minced
1 egg
salt and pepper to taste

Heat oven to 400 F. Mix ingredients until well incorporated. Form into four quarter pound patties (or smaller if you desire) and place on a foil lined baking sheet. I used the parchment/foil combo stuff so my food isn't in direct contact with the aluminum. Bake for 20 minutes, or until well done (or whatever your desired doneness. It took closer to 30 minutes for my patties today)

I served the patties with these: http://www.paleoplan.com/2011/10-09/paleo-burger-buns/ They weren't like normal buns, but tasted pretty good. I just made one "bun" for each patty and we ate them open face style with arugula and spinach, and pickled beets on top. Very good and very filling! Of course you could serve with whatever buns or toppings you like. My kids DEVOURED the whole meal, I was amazed.

We don't get bison meat often because it is expensive here, but I can find it pretty easily at our Earth Fare or Whole Foods markets.

This was the first time I have been able to handle raw meat in a while. I gagged a couple times, but held it together!

How is the texture? I have tried to make bison burgers before bu they were sooooooo dry.

try adding a little olive oil. They get dry because it is such a lean meat. Adding a bit of fat like olive or coconut oil helps. These weren't too dry, but not as juicy as a beef burger. But I also did not add any extra fat besides the egg, if I had done so I think they would have been much more moist. I don't mind dry burgers though, as long as it's not like particle board type dry, which these weren't.
