I made pumpkin spice whoopie pies with maple filling last year for a party. They didn't last long. Easy to make, too.

Something like this: Pumpkin Whoopie Pies Recipe | Epicurious.com but with LOTS of maple syrup in the filling. It took more than you'd think, and actual maple syrup.

Butterscotch Pumpkin Blondies Favorite things EVER. I now even put butterscotch chips in my pumpkin cookies because butterscotch and pumpkin are apparently the perfect pairing.

Pumpkin snickerdoodles

Pumpkin Chocolate Chip Cookies

1 c. shortning (butter flavored)
2 c. sugar
1 egg
2 tsp vanilla
2 c. pumpkin
4 c. flour
1 tsp salt
2 tsp cinnamon
1 tsp cloves
1 tsp ginger
2 tsp baking soda
2 tsp baking powder
12 oz chocolate chips

Cream shortening and sugar; add egg, vanilla and pumpkin. Mix well. Add dry ingredients and then chocolate chips. Bake on greased cookie sheet @ 375* for 12-15 minutes

((I add more vanilla, 1 tbsp instead of 2 tsp))
Thanks to babydoll213 for the siggy! My kids' blog Cora's blog

All of my recipes are vegan hehe. But you can of course substitute cow's milk or whatever else. I pinned a bunch recently cause I've been crazy about pumpkin

Pumpkin hot chocolate

Pumpkin cinnamon rolls

Pumpkin spice latte - or frappacino! They're supposed to be copycats of the starbucks version.

Pumpkin spice cake - I made this without the icing, and it is amazing!

This is my very favorite pumpkin muffin recipe ~ totally smells like Williamsburg, VA!

1/2 c. (1 stick) butter/margarine, room temp.
3/4 c. dark brown sugar, firmly packed
1/3 c. molasses
1 egg, room temp.
1 c. cooked or canned pumpkin
1 3/4 c. flour
1 t. baking soda
1 1/2 t. cinnamon
1 t. nutmeg
1/4 c. (or more!) semi sweet chocolate chips,
currants, raisins, or slivered almonds, optional

I ALWAYS pick chocolate chips!

Preheat oven to 400 and prepare muffin cups. Beat
butter, sugar adn molasses until fluffy. Add egg adn
pumpkin, stir until well-blended.

Mix dry ingredients in a separate bowl and then fold
into wet ingredients, just enough to blend (try very
hard not to overmix!). Spoon into muffin cups until
3/4 full and bake until tops spring back when touched
lightly, 12-15 minutes.

They never tasted better than when baked in my
stoneware muffin pan, which I sadly no longer have....
