Is it possible, or likely? We keep getting strange rashes at random times in the week. It clears up quickly though. I use cloth diapers and wipes and I know it is not a clothing or detergent allergy.

Are both of you getting rashes or just baby? My son gets diaper rash if I eat anything Spicy.

It's very possible. Is he having any solids during the day too? Keep that in mind when trying to find a connection. For DD, she will get a diaper rash if she eats anything acidic, like tomatoes (one of her favorites). It's likely he's not eating whole solid foods yet but just to give you an example. Also be aware of other signs of food allergies.
Some babies can be sensitive too. I know if I miss a poop even by 5 minutes, Abby starts to get a rash. That's another possible explanation for them. To find a connection though, start a food diary. See if you can find a connection between foods you eat or he eats and the rash.

It definitely can be tied to foods & most likely is tied to foods.

Where is the rash?
