I was a vegetarian for 10 years so I know quite a few recipes and things I could make that are vegetarian but I rarely make anything vegetarian these days. My family doesn't like eating vegetarian meals so that's part of it. But, I've been really trying to eat a lot of protein. My goal is around 40 percent protein, 40 percent carbs, and 20 percent or less fat. When I was vegetarian I only tried to eat 15 percent protein and most of my diet came from carbs.

I'd love to add some vegetarian meals back to my diet but I just need to figure out some ways to do it that will work with my family or maybe I will try to start making some vegetarian meals for lunch that I can eat and make something different for my family.

A few of my favorite vegetarian things to make are red or black beans and rice, polenta with sauteed veggies or spaghetti sauce, and any type of stir fry. I just need to start making these things again.

We lately started to try to eat more vegetarian meals. We watched the documentary Forks over knives and it really got us thinking about what we put in our bodies. DH is a big meat eater, so I'm very happy that we eat vegetarian about twice a week now. It also helps with weight loss (for us at least).

Maybe tomato soup and a grilled cheese sandwich every now and then, but that is probably as close as we get. We are very much a steak and potatoes family. Kendra's school has started having 1-2 meatless meals a month.

I don't think I ever eat a meal without some sort of meat in it. I don't know how you did it for 10 years. I went 6 months in college on a bet and didn't eat any meat and it was a very long 6 months.

We eat many vegetarian meals, and when we do have meat it is more like an ingredient (as in soups or casseroles) or a "side" portion. Meat is too expensive and what I would consider "quality" meat (organic, non-feed-lot) is just not available here.

Its rare for us not to have meat. DH is Croatian and meat and food are huge in his family.

We don't eat many vegetarian meals, now and then I'll make a meatless meal, but DH always complains about it
