I hope this isn't already posted, but this is a huge favourite at my house (except for the 11 yr old picky boy)

2 cups boneless skinless chicken breast
1 to 2 tbsp olive oil
1 to 2 cups frozen broccoli (this will depend on your pan and your palette)
1 can cream of broccoli soup
1/3 cup milk
2 cups grated mozzarella cheese
1 1/4 cup cornflake crumbs (you can find this where they keep Shake 'n' Bake)

  • Preheat oven to 425F
  • Chop chicken into reasonable bite sized pieces
  • Place chicken and olive oil in a pan - cook thoroughly stirring often
  • Add frozen broccoli - turn the pan down low - cover and let the steam partially soften the broccoli - do not overcook!
  • Place chicken & broccoli mixture into a casserole dish
  • Combine milk and cream of broccoli soup in a cup/bowl (whatever works)
  • Pour mixture over chicken & broccoli - spread as evenly as possible
  • Evenly cover with approx 1/4 cup of cornflake crumbs
  • Add shredded mozzarella cheese - this should be enough to cover the entire top of the mixture
  • Add the remaining cornflake crumbs evenly to the top of the dish
  • Place dish uncovered in the oven for 25 minutes
  • Cool for at least 5 minutes after removing from the oven
This is a nice creamy filling meal, and the topping done in the way I mentioned makes for a cheesy and slightly crispy flavour.
