Chicken Kiev ~ approx. 30 mins from start to finish

4 boneless/skinless chicken breasts

2 eggs beaten add a tiny bit of water to dilute

Plain bread crumbs

All purpose flour

Fresh dill & chives


1 stick of real butter frozen (can freeze way ahead of time)

In 3 seperate bowls you will need one for the eggs, one for the bread crumbs and one for the flour - set aside

Chop fresh dill and chives - set aside

Pound chicken breasts until flat but not paper thin (will need a meat tenderizer)

Slice frozen butter and roll in fresh dill & chives

Heat large skillet or frying pan with just enough oil to cover the bottom of the pan -med/low heat

In the center of each chicken breast place 1-2 pats of butter with fresh herbs, fold over ends and sides and secure with toothpick

Dip chicken into egg, then flour, then bread crumbs

Place chicken into hot oil and fry until dark golden brown

NOTE: do not remove toothpicks before serving doing so will cause butter sauce to leak out

Serve with perogies or your favorite potato dish

Chicken Lorraine ~ Approx. 1 hr 30mins from start to finish

1 package of TGIFriday's spinach dip

1 package of McCorrmick's alfredo sauce

4 boneless/skinless chicken breast (use frozen for best results)

Prepare chicken with your favorite spices ~ I use salt & pepper to taste

Pre-heat oven to 355*

Baked chicken for 1 hr.

While chicken is baking the last 10 mins prepare spinach dip according to directions on the box

Prepare alfredo sauce according to directions on package

Once chicken is cooked throughly, split breasts down the side and stuff with spinach dip and top with alfredo sauce

Bake for approx. 10 more mins until spinach and sauce is hot

Serve immediately and compliments any vegetable
