rice & sausage casserole
Another one I don't really follow the recipe to...

1 pkg (16oz) mild italian sausage links
1 (16oz) pkg frozen peas, thawed
3 C cooked rice (great for leftovers)
1 C milk
1 C cheddar cheese
8 oz sliced fresh mushrooms
1 small onion, chopped

Brown sausages in large skillet (add a little water to keep them from sticking). Remove from skillet & set aside to cool. Add onion & mushrooms to same skillet & saute until onion is translucent & mushrooms are tender. Meanwhile, slice the sausages into 1/4" thick "coins". Mix together: rice, sausage, peas, milk, cheddar, onion & mushroom mixture in an oven safe pan or casserole dish. Cover w/ foil & bake at 350* for 20 minutes or until heated through.
