Carne Asada nachos?? There's a little mexican fast food restaurant from our home town that makes the world's best Carne Asada nachos, and I would love to make them for DH (okay, for me too, LOL). Any recipes for carne asada would be *fantastic*. Thanks!!

mmmm i love carne asada (being half mexican and all)

1 pound of carne asada
mild chedder and monterey jack cheese (as much as desired)
I can of cooked pinto beans
corn or tortilla chips

season asada generously w. salt and pepper, grill and lemon or lime if desired. (esp if bbqing)

in large glass pan, layer corn chips, grated cheese, cut up asada, and pinto beans
bake @ 350 until cheese is melted and bubbles at sides

serve w. sour cream, home made guacamole and home made pico de gallo

1 tomato
2 avacados
1/2 white onion
1 clove of garlic
1 jalepeno
dash of cilantro just a little for a hint
lemon juice

take tomato and fresh jalepeno and wrap in foil. place over heated burner. expect to hear some popping. rotate to make sure all sides get cooked. take jalepeno, cut in half and seed until desired... mix all ingredience in a blender and blend. pour into a dish, add a squeeze of lemon juice and salt to taste.

pico de gallo

2 tomatoes
1/2 white onion
1/2 fresh jalepeno
1/4 cup of fresh cilantro
1 clove of garlic
lemon juice

chop all veggies finely and add together. squeeze lemon juice and add salt to taste. let set for 2 hours so the acid in the lemon can break everything down and mix the flavors. chill until served!

hope you like these nachos as much as my family does
