This is so easy and delicious!


5lb pork roast
1 onion, sliced
1 red pepper, coarsely chopped
3 or 4 carrots, cut into circles
1/4 c UNPACKED brown sugar
1 14oz can crushed pineapple (or you can use cut up fresh pineapple)
1 tbsp tomato paste
1 tbsp soy sauce
salt and pepper to taste
a pinch of ground ginger

Brown the pork roast in a pan, then add to slow cooker. In that same pan, add remaining ingredients, stir, then add to the crockpot. Cook on low 5-6 hours. Enjoy!
