If you'd like, make this with chicken pieces instead (like boneless skinless chicken breasts). Place pieces in crockpot, combine oj and honey, and pour that over. Take the lemon, quarter it, squeeze a little of the juice over the pieces, then lay the quarters over the top. Cover and cook on low for 4-6 hours.

Citrus Chicken

1 lemon
1 roasting chicken
1/2 cup orange juice
1/2 cup honey

Pierce lemon with fork and place in the cavity of the chicken. Place in slow cooker. Combine orange juice and honey, pour over chicken. Cover and cook on low 8 hrs. Remove lemon and squeeze over chicken. Serve.
