You need two crockpots for this meal: one large one (for the meat) and one small one (for the apples)

Pork Chops and Sour Kraut:
Four-six large boneless pork chops (use whatever cut of pork you and your family like!)
1 C Fat free italian dressing
4 tbl Red Wine Vineger
4 tbl Extra virgin olive oil
some rosemary, tyme, sage, basil, salt, and pepper to taste
one bag sour kraut

Poke pork all over with a fork and place in large crockpot. Pour italian dressing, vineger, and oil over the pork. add seasons to taste. Add water until pork is barely covered. Cover whole thing with sour kraut. Cook on high for about 5-7 hours, or until pork is cooked all the way through.

Core and slice about five apples. You may want to cut the slices in half if they seem too long. place in crockpot. Cover with cinnamon, brown sugar, and a bit of nutmeg. Pour 1/2 cup of water over. You may add raisins or walnuts. Bake on low alongside the pork.

When the pork is done, you can serve the apples on the pork and the sour kraut on the side (that's how I like) or the sourkraut on the pork and the apples on the side, or you could serve everything as its own dish! This goes great with banana bread or mashed potatoes!!! Enjoy!!
