I have two.

Baked Rice Pudding</span>
Prep: 10 minutes
Bake: 45 minutes
Oven: 325* F
Makes: 6 servings

3 beaten eggs
1.5 cups milk
1/3 cups sugar
1 tsp vanilla
1 cup cooked rice
1/2 cup raisins
ground nutmeg or cinnamon (optional)

1.) In a bowl combine eggs, milk, sugar, and vanilla. Beat until combined but not foamy. Stir in rice and raisins. Pour egg mixture into a 1.5-waurt casserole. If desired, sprinkle with nutmeg. Place casserole in a 2 qt. square baking dish on an oven rack. Pour boiling water into baking dish around casserole to a depth of 1 inch.
2.) Bake in a 325*F oven for 45-55 minutes or until a knife inserted near the center comes out clean, stirring after 30 minutes. Serve warm or cold. To store, cover and chill.

<span style="color:red">Saucepan Rice Pudding

Prep: 10 minutes
Cook: 30 minutes
Makes: 6 servings

3 cups milk
1/3 cup uncooked long grain rice
1/3 cup raisins or mixed dreid fruit bits
1/4 cup sugar
1 tsp vanilla
1/4 tsp ground nutmeg

1.) In a medium havy saucepan bring milk just to boiling; stir in uncooked rice and raisins. Cook, covered, over low heat for 30-40 minutes or until most of the milk is absorbed, stirring occasionally. (Mixture may appear curdled)
2.) Remove saucepan from heat. Stir in sugar and vanilla. Spoon into dessert dishes. Sprinkle with nutmeg. Serve warm or cold.
