Pudding Cookies

3/4 c baking mix
1 pkg instant pudding mix
1 egg
1/4 c cooking oil

Combine all 4 ingredients. Shape into small balls on an ungreased cookie sheet, and flatten with hand. Bake at 350 degrees for about 8-10 minutes, until they look set. Makes about 2 1/2 dozen. Will be softer if you take out of the oven before they start to brown around the edges, which makes them crispy.

We love these around here! These are especially good if you make cookie "sandwiches" with leftover frosting - chocolate pudding cookies with vanilla, vanilla with strawberry or cherry, butterscotch with cream cheese ... the list is endless. Both my kids love these!

You can also play around with different flavors if you double the recipe (this doesn't make much anyway) - one of my favorites is to mix butterscotch and choloate fudge. Yum!
