If we're talking fiction only, Watership Down by Richard Adams, Chocolat by Joanne Harris, and The Celestine Prophecy by James Redfield, for very different reasons.

If we're including non-fiction, Alive (I forget the author but it's the true story of the Andes plane crash survivors who ate human meat to survive), A Little Light On The Spiritual Laws, A Little/New Light On Angels and Light Up Your Life by Diana Cooper would be up there, as would Cosmic Ordering by Jonathan Cainer.
