Very colorful, easy to make. Only requires a little bit of time for flavors to mix in the fridge before you serve. I usually make on sunday and eat throughout the week.

Bag of pre shredded cabbage (this can be plain or with red cabbage and carrots)
2-3 diced tomatoes
1/2 cup chopped fresh cilantro
juice from 1-2 lemons or limes (which ever you have or prefer)
chopped red onion (1/4 or 1/2 depending on how much you like raw onion)
low fat itallian salad dressing - i never measure, but enough to lightly coat everything
Can also add some sliced cucumbers if you like, I usually keep these separate and add when I eat.

I have added this as a topping to salad greens and top with some mexican style ground meat for a great taco salad while the family is having tacos. Add cheese and you still have plenty of carb room for some tortilla chips and salsa!
